Who this day is for

This is a day for people who travel to eat, and for children who are happier doing something with their hands than looking at things. It is not a cookery school with individual stations and a certificate. A cook takes you round a market, you buy what lunch needs, and you cook it together in a family garden kitchen, with the cook doing the parts that need a hot pan and a sharp knife.

We put it near My Tho because My Tho is the closest of our places to Ho Chi Minh City, about 71 km by road, and because it has a dish of its own: hu tieu My Tho, thin chewy rice noodles made from Go Cat rice, in a pork-bone broth sweetened with dried squid and shrimp. A bowl typically cost VND 20,000–40,000 in town in 2023 (a published figure; check locally), and it is a better start to a food day than any hotel breakfast.

How to read this table

Lines that say road routing, or name a publisher, come from a published source, listed under the table with the date we checked it. Lines that say our plan describe how we design the day: they are promises about the plan, not measurements. The step height at a wharf, for example, changes with the tide, so we do not print a number for it. Your written quote repeats the table for your dates.

Starting at 08:00 means you reach the market after its earliest rush. That is a trade we make on purpose: the stalls are still full, the aisles are calmer, and nobody had to be up at five.

Day by day

Day 1

My Tho market, the garden kitchen and a long lunch

Flipping your own banh xeo, with the cook beside you

08:00 pick-up and the expressway south, with one toilet stop. Around 09:45 you sit down in My Tho for a bowl of hu tieu, the noodles made from local rice; children who do not want soup get plain noodles and broth on the side.

Then the market, with your cook and guide. You walk slowly through the fresh-food section: herbs and greens, river fish and shrimp, rice flour, coconuts. The cook explains what each thing is for and buys what your menu needs; you carry the bag if you like. The floor is wet in places, so closed shoes are better than sandals. Older travellers can sit at a stall with a drink while the rest of the party shops.

About 11:00 the car takes the turn-off from the Rach Mieu bridge onto Thoi Son islet and a garden kitchen among fruit trees. You cook three dishes together: banh xeo, the large crisp rice-flour pancake with shrimp, eaten wrapped in many kinds of greens; a soup; and a fish dish, often snakehead, which the cook may grill the old way in burning straw while you watch from a safe distance. Children wash herbs, fold and wrap; they do not handle knives or hot oil.

Lunch is what you cooked, around 12:30. Then an hour of rest in hammocks. If you want, a 20-minute sampan loop on the islet's small canals follows at about 14:00. You leave about 14:45 and are back in the city between 16:30 and 17:15.

Menus change with the market and the season, and we adapt them for vegetarians and for allergies you list in the form. The pricing page explains the quote and how to book covers the steps. Travelling with small cooks? Read the delta with young children.

The kitchen is open-sided and shaded, with low stools and a table at sitting height. Grandparents who would rather not stand at a stove can do the wrapping at the table, which is where most of the talking happens. Aprons are provided; clothes that can take a splash of oil are better than good linen.

You leave with the method for banh xeo written out in English by your guide, so you can try it at home with rice flour, turmeric and coconut milk from an Asian grocer. It never tastes quite the same away from the delta's herbs, and that is a good reason to come back.

Who this day is NOT for

  • Anyone wanting a formal cooking class with your own station, recipes printed and a certificate.
  • Travellers who want to see a dawn wholesale market at full volume. We arrive mid-morning by design.
  • People who dislike strong smells or crowded, wet market floors. You can skip the market and meet the cook at the garden.
  • Those with severe allergies to shellfish or fish who cannot share a kitchen where they are cooked. Tell us and we will say honestly whether we can adapt the day.
  • Travellers wanting a quiet, unvisited village. Thoi Son is busy with day visitors.

Common questions

Questions travellers ask most

How young can children join in?

Children from about four usually enjoy washing herbs, folding and wrapping. Under that age they watch and eat. Knives and hot oil stay with the cook and the adults.

Can the menu be vegetarian?

Yes. Choose the vegetarian option and the cook plans pancakes, soup and a vegetable dish without meat or fish. Tell us whether fish sauce is acceptable.

Do we need to be at the market at dawn?

No. We arrive mid-morning. The stalls are still full, the crowds are thinner and nobody needs a 5 am alarm.

Is there a boat on this day?

Only if you want one. Thoi Son is reached by road from the Rach Mieu bridge; the 20-minute sampan loop after lunch is optional.
